Are there any decent USB 802.11AC devices that work in monitor mode reliably? We have one that has a MediaTek chip in it. It required compiling and it's made the system unstable and doesn't really work.

If you're using Linux, probably not.

MTK and Realtek devices have proprietary (non-mac80211) vendor drivers. They may have some vendor-specific monitor mode, but it wouldn't be standard.
Broadcom AC devices, if supported by Linux, use brcmfmac, which (AFAIK) doesn't support monitor mode. nexmon works with some BCM chips, though.
QCA has a limited selection of USB AC chipsets. I don't think there is an in-kernel driver for these and there is only one USB stick with a QCA chipset that I know of - the Linksys WUSB6100M.

Windows may have some vendor drivers with support. I think OmniPeek works with some Realtek chipsets.
